Honey Cookies

nothing better than home baked goodies. Lucas and I made the dough for these cookies yesterday, but didnt get a chance to roll them out, bake them and decorate.

So my 2 big boys did it this morning.

Here is the recipe:

Honey Cookies
makes aprox 26
prep 30mins plus chilling

125g butter at room temp
1/2 cup caster sugar
1 egg yolk
2 cups pln flour
1 tsp bicarb soda
1/4 cup honey

Step 1. Preheat oven to 180 degrees C. Lightly grease and line 4 baking trays with baking paper. In a large bowl, using an electric mixer, beat together butter and sugar for 2=3mins until creamy. Add egg yolk, beating well. Fold in combined sifted flour & bicarb soda.

Step2. Heat honey in a microwave safe bowl in the microwave on high for 20 seconds. Stir into dough. Mix well, Cover in plastic wrap. Chill for 20 mins Knead gently on a lightly floured surface. Roll out between 2 sheets of baking paper until 0.5mm thick.

Step 3. Using cutters, cut out biscuits. Place on prepared trays. Bake for approx 10 mins or until firm to touch. Allow to cool on trays spread with icing and decorate.

beat 1 egg white with a wooden spoon until frothy, add icing sugar 1 tab at a time beating well after each addition, when icing is piping consistency, mix in a few drops of lemon juice & add colouring of your choice.

  1. What a lovely team, they are.

Cute to see, family doing together. Touches my heart. I missed the time when the kids are young.

Enjoy your time with him. Time goes too quick.

Have a happy Sunday and week ahead.

Thank you so much for taking the time to leave a comment :)
